Chicken Cacciatore


Yikes! It's October already people! Can you believe it? Did September even happen? When I woke up this morning I felt that chill in the air that makes it nearly impossible to get out of bed. It was decided at that exact moment that dinner had to be something hot, savory, and served in a bowl (because everything served in a bowl just tastes better, right?) I decided on one of my favorite recipes, chicken cacciatore. And yes...it allowed me to use my favorite appliance once again - the crockpot!

Using this recipe, I assembled all the ingredients before breakfast, and threw them in the crockpot. I had to make a couple changes to the recipe, just because I didn't have everything on hand. Instead of white wine, I used red. And I didn't cut the chicken up at all, because raw meat gives me the creeps!

It's amazing what 8 hours in crockpot will do to a list of ingredients. As soon as I opened my front door after a long day at work, I was hit with the smell of everything cooking together. It was incredible. It smelt like I had a chef cooking in the kitchen all day! 

I boiled up some brown rice to serve the chicken cacciatore over (in a bowl of course!)

All the vegetables were cooked perfectly and had absorbed the flavor of the red wine and the seasoning. The chicken was so moist and tender and fell right off the bone. This dish warmed me right up! This has got to be my favorite (and easiest) meal to make in the crockpot.

  1. this looks delicious! I rely on my crockpot way too often - one of my favorites (and easiest) is chicken breast, a jar of salsa and some additional spices for tacos or enchiladas. x
