Using this recipe, I assembled all the ingredients before breakfast, and threw them in the crockpot. I had to make a couple changes to the recipe, just because I didn't have everything on hand. Instead of white wine, I used red. And I didn't cut the chicken up at all, because raw meat gives me the creeps!

It's amazing what 8 hours in crockpot will do to a list of ingredients. As soon as I opened my front door after a long day at work, I was hit with the smell of everything cooking together. It was incredible. It smelt like I had a chef cooking in the kitchen all day!
I boiled up some brown rice to serve the chicken cacciatore over (in a bowl of course!)

All the vegetables were cooked perfectly and had absorbed the flavor of the red wine and the seasoning. The chicken was so moist and tender and fell right off the bone. This dish warmed me right up! This has got to be my favorite (and easiest) meal to make in the crockpot.
