[Almost] 2 Ingredient Pumpkin Spice Cookies

I've got a bone to pick with my local Stop & Shop - why oh WHY do they never have spice cake mix?! It really upsets me, especially around this time of year when I crave that amazing combination of cinnamon, nutmeg, and cloves in anything and everything I consume. It's not like I eat spice cake on the reg but when you hear this recipe I know you're going to run out to your grocery store and exhaust them of the ingredients necessary. 

Now since my grocery store was unable to provide me with what I needed, I improvised. Don't have spice cake mix? Don't worry. Grab a box of the yellow cake mix and add the following to it:

- 1 teaspoon of ground cinnamon
-1/2 teaspoon of allspice
-1/2 teaspoon of nutmeg
-1/2 teaspoon of ground cloves
-1/2 teaspoon of ginger




Mix it all together and voila! Spice cake mix! Now you have 1 of 2 ingredients needed for these delicious cookies. Now all you need is a can of pumpkin! Throw it in with the cake mix, and give it a good stir until you have a lovely orange batter. 



Plop the batter by the spoonful onto a lightly greased cookie sheet, and bake at 350 degrees for 10-12 minutes. They are done when the tops are firm to touch.



I love the cake-y consistency of these cookies - and could they be any easier?? Plus they will fill your house with a wonderful aroma.

    These look amazing – and to be honest I'd make them just to get my house smelling so gloriously of fall.

  3. Oh my goodness they look so yummy! And best of all, I just discovered that most cake mixes are vegan, so just adding pumpkin to this makes it a sinful vegan dessert! Thanks so much! :)
